At first you need to list all the services you can offert to your customers.
The service catalog is made by one or several Service Family, hosting some Services, themselves hosting some service subcategory.
When you create your service catalogue keep in mind that the final user will choose a service subcategory. The best way to create the catalogue is to have as few families as possible and some very clear services in order to guide the customer to the good service subcategory
A very complex Service catalogue will usually be counterproductive.
In the Service management module begin with the creation of a Service Family. Ex: IT Services
In the Service management module then create your Services. Ex: Printers and peripherals
In the Service management module then create your Services Subcategories. Ex: Cartridge replacement
In order to allow your customers to pick the good service while creating his tickets you'll finally have to attach these services to the customer contract(s) of your choice.
